




Altavista Single Vineyard Temes Dry Red Wine
It presents a deep purple color, and its aroma evokes fresh fruits and floral scents. The taste is mellow, the tannins are extremely sweet, and the oak barrels endow the wine with an absolutely beautiful flavor. The aftertaste is long-lasting. The winery has vineyards that are over 40 years old. The light soil, with sand and a little silt, makes it highly permeable. The traditional irrigation technique using snow-capped mountains and snow water. It has the coldest climate among all our wine regions: cool nights, hot days, and gentle and steady breezes, which have created this healthy vineyard. The grapes ripen slowly and evenly. Small bunches of compact grapes are the selected feature of this vineyard. From early April to mid-April, it is harvested by hand. Transport grapes in a constant temperature box to ensure that the fruits do not break and maintain a constant temperature of 10°C for 24 hours. Each bunch of grapes is hand-picked and then peeled before being placed in a concrete winery. Fermentation begins spontaneously with local yeasts in the vineyard. During the fermentation process, the aroma, color and tannins of the fruit are constantly extracted from it. It is aged in a concrete wine cellar for 28 days to facilitate the separation of the wine body from the sediment. Emulsification fermentation occurs spontaneously in concrete wine tanks. It is then aged for 12 months in brand-new 225-liter and 600-liter French oak barrels.
